Description

Well-seasoned and quick to prepare, this Ground Beef Taco Meat is perfect for hard and soft-shell tacos, as well as salads, burritos, enchiladas and more!


Ingredients

  • 2 teaspoons olive oil
  • 2 lbs. lean ground beef
  • 1 small red onion, finely minced
  • 1 tablespoon tomato paste
  • 1 teaspoon coarse kosher salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 1 teaspoon dried oregano
  • 1 tablespoon cornstarch
  • 1/2 cup refried beans
  • 3/4 cup beef broth

Instructions

  1. In a large skillet, heat the oil over medium-high. Once hot, add the beef and cook until no longer pink, about 8 minutes. If a lot of fat has been rendered, drain off nearly all of it.
  2. Reduce the heat to medium low, add the onion, and cook until it begins to soften, about 3 minutes.
  3. Add tomato paste, salt, pepper, garlic powder, chili powder, oregano and cornstarch and stir until fragrant, about 1 minute.
  4. Add the refried beans and the broth and scrape up any browned bits. Cook until the mixture has thickened up and the broth has reduced, about 5-7 minutes.
  5. Serve hot in tacos or as desired.

Notes

This recipe was tested using Diamond Crystal coarse kosher salt. If you use Morton's kosher salt or fine salt, decrease the volume by half.
