Description

Grilled corn is great, but Parmesan Garlic Butter Grilled Corn is even better. Make homemade garlic butter (or use store-bought) with parmesan and herbs to create a side dish everyone is going to love.


Ingredients

  • 4 ears corn
  • 1 tablespoon oil
  • coarse kosher salt
  • 8 tablespoons unsalted butter, softened
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, finely minced
  • 1 tablespoon minced roasted
  • 1 teaspoon garlic powder

Instructions

  1. Prepare a grill for high-heat cooking. Shuck the corn, removing both the husks and the silk. Cut the corn cobs in half or thirds.
  2. In a large bowl, mix together the corn cobs, oil, and a big pinch of salt until the corn is evenly coated.
  3. In a small bowl, mix together the softened butter, Parmesan, parsley, minced garlic, garlic powder, and ¼ teaspoon salt until fully combined.
  4. Grill the corn, turning the cobs every 5 minutes or so, until the corn is tender and some of the kernels are beginning to darken, about 10-15 minutes.
  5. Transfer half of the prepared butter to the now-empty large bowl used for the corn. When the corn is done grilling, toss the corn with the garlic butter in the bowl until evenly coated.
  6. Serve immediately with extra parmesan garlic butter on the side.

Notes

Use store-bought garlic butter if you want. Replace the butter, roasted garlic, and garlic powder with 8 tablespoons of store-bought garlic butter.

Roasted garlic can also be purchased premade in the deli section or as minced roasted garlic in a jar. To make roasted garlic at home: cut off the top of a garlic bulb to expose the cloves, drizzle with olive oil, wrap in foil, and bake at 400°F for 30-40 minutes until the cloves are soft and golden brown. Squeeze the roasted garlic out of the cloves and use as instructed.

The garlic butter can also be prepared using a mini food chopper or food processor, blending all ingredients together.
