Description

An effortless weeknight meal, these Ranch Chicken Bites use a homemade ranch seasoning and are made easily in one skillet with a quick cream sauce.


Ingredients

  • 2 pounds boneless skinless chicken breast, cut into 2” pieces
  • 2 tablespoons dry buttermilk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon fine sea salt
  • 1/2 teaspoon dried parsley
  • 1/2 teaspoons dried dill
  • 1/2 teaspoon paprika
  • 1/2 teaspoon ground white pepper (or black pepper)
  • 1 tablespoon olive oil
  • 2 tablespoons cream cheese
  • 1 tablespoon lemon juice
  • Fresh chives, for garnish

Instructions

  1. Add diced chicken to a bowl. Dry off the chicken really well with paper towels. Add the dry buttermilk, garlic powder, onion powder, salt, parsley, dill, paprika, and pepper. Toss together until well coated.
  2. Heat a large heavy-bottomed skillet over medium heat. Once hot, add the oil.
  3. When the oil is hot, add the chicken in one layer (in batches if necessary) and cook for 2-3 minutes per side, about 8 minutes total.
  4. Lower the heat, add the cream cheese and lemon juice, and scrape up any lightly browned bits on the bottom of the pan. Stir until the cream cheese melts in to the chicken and coats it. Cook until the chicken is done, about 1-2 minutes more or until the chicken reaches an internal temperature of 165ºF.
  5. Sprinkle with chives and serve.
