Description

Diced chicken breast is quickly seared off and cooked with a butter garlic sauce. Serve these Garlic Butter Chicken Bites with a side dish for a simple and flavorful weeknight meal.


Ingredients

  • 1-1/2 pounds chicken breast, cut into 2” pieces
  • Salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1 tablespoons flour
  • 1 tablespoon olive oil
  • 4-6 cloves garlic, minced
  • 2 tablespoons salted butter
  • 1 tablespoon lemon juice
  • Parsley, for garnish

Instructions

  1. Dry off the chicken really well with paper towels. Add diced chicken to a bowl.  Season with salt, pepper and garlic powder, and toss to coat with the flour.
  2. Heat a large heavy-bottomed skillet over medium heat. Once hot, add the oil.
  3. Add the chicken when the oil is hot, in one layer (in batches if necessary) and cook for 3-4 minutes, or until lightly browned. Flip and cook for an additional 2 minutes until lightly golden on the other side.
  4. Add in the garlic, butter and lemon juice, and scrape up any browned bits on the bottom of the pan. Cook until the chicken is done, about 1-2 minutes more or until the chicken reaches an internal temperature of 165ºF.
  5. Sprinkle with parsley and serve.
