If the grill is on in my house, it also means I'm shucking corn because my kids love grilled corn. And lately, I've been tossing the grilled corn with some parmesan garlic butter after it's finished cooking and it's just so good. Between the natural sweetness of grilled corn and the rich, savory flavors of the garlic butter and parmesan, this side dish is so flavorful and easy to make!

Making the Garlic Butter
I nearly always have garlic butter on hand at home, whether store-bought or homemade. If you prefer convenience, you can always pick up garlic butter at your local grocery store. Kerrygold has recently started selling a garlic butter that’s as close to homemade as you can get. Most store-bought versions don’t include parmesan, so just add some when you’re tossing your grilled corn together.
Grilling the Corn
There are many different methods for grilling corn, but the simplest and most straightforward is to cook the corn directly on the grill with a little oil and salt rub. This method achieves a perfect char and smoky flavor without any fuss. It takes about 10-15 minutes to grill over medium-high heat until the kernels are tender and slightly charred.
For a steamed effect, corn can be cooked in the husks, with the silk removed and the husks soaked for 15-20 minutes to prevent burning, or wrapped in foil. Alternatively, grilling can be skipped entirely, and the corn can be boiled, cooked on an indoor grill pan, or even prepared in an Instant Pot. Each method has its own merits, but direct grilling is (in my opinion) quick, easy, and delivers that classic grilled corn flavor.

Parmesan Garlic Butter Grilled Corn

Description
Grilled corn is great, but Parmesan Garlic Butter Grilled Corn is even better. Make homemade garlic butter (or use store-bought) with parmesan and herbs to create a side dish everyone is going to love.
Ingredients
- 4 ears corn
- 1 tablespoon oil
- coarse kosher salt
- 8 tablespoons unsalted butter, softened
- ¼ cup grated Parmesan cheese
- 2 tablespoons fresh parsley, finely minced
- 1 tablespoon minced roasted
- 1 teaspoon garlic powder
Instructions
- Prepare a grill for high-heat cooking. Shuck the corn, removing both the husks and the silk. Cut the corn cobs in half or thirds.
- In a large bowl, mix together the corn cobs, oil, and a big pinch of salt until the corn is evenly coated.
- In a small bowl, mix together the softened butter, Parmesan, parsley, minced garlic, garlic powder, and ¼ teaspoon salt until fully combined.
- Grill the corn, turning the cobs every 5 minutes or so, until the corn is tender and some of the kernels are beginning to darken, about 10-15 minutes.
- Transfer half of the prepared butter to the now-empty large bowl used for the corn. When the corn is done grilling, toss the corn with the garlic butter in the bowl until evenly coated.
- Serve immediately with extra parmesan garlic butter on the side.
Notes
Use store-bought garlic butter if you want. Replace the butter, roasted garlic, and garlic powder with 8 tablespoons of store-bought garlic butter.
Roasted garlic can also be purchased premade in the deli section or as minced roasted garlic in a jar. To make roasted garlic at home: cut off the top of a garlic bulb to expose the cloves, drizzle with olive oil, wrap in foil, and bake at 400°F for 30-40 minutes until the cloves are soft and golden brown. Squeeze the roasted garlic out of the cloves and use as instructed.
The garlic butter can also be prepared using a mini food chopper or food processor, blending all ingredients together.
This recipe makes more garlic butter than needed for 4 ears of corn. Save any remaining garlic butter for another use; for more information, see the Large Batch Garlic Butter recipe for ideas.
