Giant BLT with Basil Avocado Mayo
My least favorite task at dinner time is serving anything individual. Like everybody, I'm nearly always rushing to get dinner on the table in a timely manner and that means doing tasks "individually" slows things down. So if there is a task I can do "all at once," such as serving dinner family style, I'll always take the option.
That means one-pot dinners, sheet pan meals, and in this case, one giant sandwich made all at the same time on a loaf of bread and sliced up for individual servings. Plus it's also fun to serve a giant sandwich to your family!
Especially when it's this delicious! BLT (bacon, lettuce, and tomato sandwiches) are already good enough on their own; but when you add in some basil and avocado, it just brightens everything up and makes it that much more special.

- avocado
- basil
- lemon juice (or lime juice is fine too)
- bacon
- juicy, ripe in-season tomatoes
- romaine lettuce (this is classic, but swap in your favorite greens here...arugula would be super delicious as well)
- salt and pepper
- bread
Types of Bread to Use
Buy a full (unsliced) bakery loaf of bread for this recipe. This recipe works well with a soft wide loaf of bread.
Some favorites I've used are Ciabatta, Sperlonga, and Italian. But truly, the bread you like to eat the most will be the best for you!
Best Way to Cook Bacon
There are a few different ways to cook bacon, but without a doubt, my favorite is in the oven. Yes, it's annoying to turn your oven on (especially in summer) just to cook one small thing. However, cooking bacon in the oven is a mess-free, hands-off method that results in super evenly cooked bacon!
Here is how to do it:
- Preheat your oven to 400°F
- Line a baking sheet with parchment paper
- Lay the bacon slices in a single layer on the baking sheet
- Depending on the thickness of your bacon, it will take between 10-15 minutes to crisp up in the oven. Check after the 10-minute mark and bake according to how crispy you like it.
- Immediately remove from the sheet tray and drain on a paper towel when cooked through.

Family-Style BLT with Avocado

Description

Ingredients
- ¼ cup mayo
- 1 ripe avocado, pitted and diced
- ½ cup packed basil leaves
- 1 tablespoon lemon juice
- Salt and pepper
- 1 lb. bacon
- 8 large (about 3 ounces) leaves of romaine lettuce, cleaned and dried
- 3 large (about 24 ounces) ripe tomatoes, washed, cored and sliced thin
- 1 (16 ounce) loaf of ciabatta bread (see notes for other options)
Instructions
- Add the mayo, avocado, basil, lemon juice and a pinch of salt and pepper to a mini food processor or blender. Blend until mostly combined, it’s shouldn’t be completely smooth.
- Slice open the ciabatta or similar bread horizontally.
- Spread the avocado mayo equally on each half of the bread.
- On the bottom half of the bread, layer the tomatoes. Sprinkle with a big pinch of salt and pepper.
- Add the cooked bacon.
- Then the lettuce leaves.
- Top the sandwich and cut into 4 equal pieces.
- Serve immediately.
Notes
This recipe works well with a soft wide loaf of bread. Some favorites I've used are Ciabatta, Sperlonga and Italian loaves.
