The perfect fall dinner, this Sheetpan Kielbasa with Apples and Cauliflower, comes together using one pan and satisfies both the savory and sweet nuances of autumn.
Just like my other sheet pan dinners (Baked Sausage, Peppers, and Onions and Sheet Pan Chicken Fajitas for example), this Sheetpan Kielbasa dinner is a dream to make on busy weeknights. While there is some prep work to get it going, it's largely hands-off cooking.
This recipe has a slight Oktoberfest feel to it. The combination of flavors is fantastic, featuring smoky kielbasa, sweet baked apples, savory cauliflower, and potatoes for a good dose of carbs. I like to serve this dish with a generous dollop of brown mustard or even some sauerkraut.

Ingredients Needed and Substitutions
Here is a brief overview of the ingredients needed for this recipe. The full recipe with quantities is listed below this text in the recipe card.
- red onion
- cauliflower
- baby potatoes (red or yellow)
- baking apple (such as Gala, Honeycrisp or Fuji)
- oil ( I use avocado)
- coarse kosher salt + pepper
- spices + herbs: fresh thyme, garlic powder, paprika (smoked or sweet)
- polish kielbasa (you can swap this with another sausage if you want)
Step 1: Roast the veggies and potatoes.
Step 2: Add the apples and the sliced kielbasa.
Step 3: Roast until sausages are browned and juicy and veggies are cooked through.
Kelli's Best Tips
This recipe is very simple to put together, but here are my best tips for ensuring success.
- The beauty of this recipe is that you really just need a sheet pan to make it happen. And when I say sheet pan, I'm referring to what is known as a half sheet pan, or a 13" by 18" rimmed baking sheet. Here is my favorite sheet pan I recommend.
- Slicing the sausage on the bias (or diagonally) provides a nice presentation and allows more of the sausage to brown in the oven.
- It's optional to leave the skin on the apple or not. Leaving the skin on adds a nice color and texture element to it. Plus, fiber! Which is always a good thing.
- Fresh thyme adds such a nice flavor to this dish, so please use it if you can get your hands on it. If you can't, use half as much dried thyme. I also like to add a pinch of fresh thyme when serving.
- Cut the veggies about the same size so they all cook at the same time.
- The most important detail about making this dish is making sure to set your timer! Nothing is worse than an easy sheet pan dinner turned badly because it got burnt (I know--I've been there!)

Leftovers make a great lunch the next day. This dish will keep well for about 2 days in the refrigerator.

Description
The perfect fall dinner, this Sheetpan Kielbasa with Apples and Cauliflower, baked all on one pan is savory, a touch sweet, savory and satisfying.
Ingredients
- 1 medium red onion, ½” diced
- 1 small head cauliflower (about 1 to 1-½ lbs.), cut into florets roughly 1-½”
- 8 ounces yellow baby potatoes, washed and cut in half
- 2 tablespoons avocado oil
- 1 teaspoon coarse kosher salt, more to taste
- ½ teaspoon fresh ground black pepper
- 2 tablespoons fresh thyme, more for garnish
- ½ teaspoon garlic powder
- ½ teaspoon paprika (smoked or sweet)
- 1 large baking apple (like Honeycrisp or Fuji), cored and 1” diced.
- 24 ounces of Polish kielbasa, sliced on the bias
Instructions
- Pre-heat oven to 425ºF and adjust an oven rack to the lower and middle part of the oven.
- On a sheet pan add onion, cauliflower, potatoes, oil, salt pepper, thyme and spices and mix together.
- Bake on the lower rack for 20 minutes.
- Remove from the oven, stir the veggies and potatoes to ensure even cooking. Place the apples and kielbasa on top and drizzle the sausage with a bit of oil and place back in the oven for 25 minutes, stirring halfway through, until the sausage is starting to brown and the veggies are cooked through.
- Serve immediately with a touch of spicy or brown mustard.
Notes
If you can't find baby potatoes use the same weight of Yukon gold potatoes or russett potatoes, diced into 1-½”-2” pieces.
Fresh thyme and can be swapped with 1 teaspoon of dried thyme.
